Chick Pea and Pasta Salad Recipe

Salad Ingredients

  • 250 g [1 packet] whole grain pasta, cooked
  • 1 large onion, chopped
  • 1 diced tomatoes tomatoes (or can of small diced tomatoes)
  • 2 cups cooked chickpeas, drained, rinsed

Dressing Ingredients

  • 20 ml [5 tsp] peanut (or tahini, cashew butter)
  • 2 cloves minced garlic
  • 1 cup water or orange juice
  • Tamari to taste
  • Black pepper to taste
  • Red pepper flakes to taste

Method

  • Whisk the dressing ingredients until smooth
  • Mix the salad ingredients together in a bowl
  • Mix the dressing in with the salad
