Potato Cake Recipe

There are many variations of Potato Cake recipes. You can experiment with your own version.

Ingredients

  • baking paper
  • 6 potatoes
  • 1 cup corn kernels
  • 1 cup cooked peas
  • 1 teaspoon mixed Italian herbs, Australian spices or any other herb and spice combination
  • 1 finely chopped onion or shallots
  • 2 tablespoons of arrowroot, cornstarch or rolled oats
  • small amount of soy, almond or oat milk depending on how moist you want the mixture to be

Method

  • Mash potatoes. You could add some cooked sweet potato to the potato mixture.
  • Add all the other ingredients
  • Place baking paper on oven trays
  • Form into patties and place on oven trays
  • Cook for 20 minutes at 180°C (350°F)
  • Flip potato cakes and cook for another 20 minutes
  • Let the patties cool for 10-15 minutes as they hold their shape better.
