Moussaka Beitinjaan – Recipe

Eggplant or Aubergine Moussaka Beitinjaan is a traditional Mediterranean dish.

Ingredients

  • 4 sliced eggplants
  • 5 sliced potatoes
  • 1 onion, chopped finely
  • 2 minced cloves garlic
  • 1 tsp corriander
  • ½ tsp black pepper
  • 1 tsp spice mix (cinnamon, cloves, bay leaf, nutmeg)
  • tomatoes or 1 can tomatoes
  • sliced capsicum

Method

  • Steam potatoes Heat pan using water (instead of oil)
  • Add potatoes, eggplant
  • Steam potatoes until soft, ensuring that sufficent water is added to pan
  • Remove and pat dry
  • Steam eggplant until soft
  • Remove and pat dry
  • Heat oven to 200°C (400°F)
  • Add potatoes then eggplants with sliced capsicum on to baking dish
  • 1 tsp corriander
  • ½ tsp black pepper
  • 1 tsp spice mix (cinnamon, cloves, bay leaf, nutmeg)
  • Bake in oven for approximately 40 minutes
