Moussaka Beitinjaan – Recipe
Eggplant or Aubergine Moussaka Beitinjaan is a traditional Mediterranean dish.
Ingredients
- 4 sliced eggplants
- 5 sliced potatoes
- 1 onion, chopped finely
- 2 minced cloves garlic
- 1 tsp corriander
- ½ tsp black pepper
- 1 tsp spice mix (cinnamon, cloves, bay leaf, nutmeg)
- tomatoes or 1 can tomatoes
- sliced capsicum
Method
- Steam potatoes Heat pan using water (instead of oil)
- Add potatoes, eggplant
- Steam potatoes until soft, ensuring that sufficent water is added to pan
- Remove and pat dry
- Steam eggplant until soft
- Remove and pat dry
- Heat oven to 200°C (400°F)
- Add potatoes then eggplants with sliced capsicum on to baking dish
- 1 tsp corriander
- ½ tsp black pepper
- 1 tsp spice mix (cinnamon, cloves, bay leaf, nutmeg)
- Bake in oven for approximately 40 minutes
