Mixed Seed Bread Loaf Recipe

Ingredients

  • 1 cup sunflower seeds
  • ½ cup flaxseed (linseed)
  • 1¼ cups quinoa flakes
  • ⅓ cup psyllium husks
  • ½ cup slivered almonds
  • 2 tbl chia seeds
  • ½ tsp salt
  • 1½ cups water
  • ¼ cup coconut oil
  • 2 tbl rice syrup

Method

  • Grease a medium 12cm x 22cm loaf tin
  • Line base with baking paper
  • Place flaxseeds, quinoa flakes, pysllium husks, almonds, salt in large bowl and mix well.
  • Combine water, coconut oil, rice syrup in jug
  • Add water, coconut oil to seed mixture and stir until well combined
  • Press mixture into loaf tin with back of a spoon
  • Refrigerate covered overnight
  • Cook in oven at 160°C (320°F) for an hour or until a skewer comes out clean
  • Stand in tin for 10 minutes
  • Turn out onto a wire rack to cool
