Apple and Carrot Loaf Receipe
Ingredients
- 2 cups wholemeal spelt flour
- 2 tsp baking powder – aluminium-free
- 1 tsp baking soda
- 3 tsp Orgran No Egg Mix
- 6 tabs water
- ¾ cup coconut sugar
- 1 cup sultanas
- 1 tsp cinnamon powder
- ¼ tsp all spice
- 1 cup orange juice
- 1 red apple (Pink Lady)
- 1 cup grated carrots
Method
- Pre-heat the oven to 180°C (360°F)
- Grease a medium 12cm x 22cm loaf tin and line with baking paper
- Sift dry ingedients, except the No Egg Mix
- Whisk No Egg Mix and water together
- Add orange juice, vanilla essence and No-Egg Mix to dry ingredients and lightly mix
- Fold in the grated the apple and carrot with the other ingredients – do not over mix
- Place mixture into the loaf tin
- Cook in oven at 180°C (360°F) for 35-40 minutes or until a skewer comes out clean
- Allow to cool for 10 minutes in tin
- Turn out onto a wire rack
