Potato Cake Recipe
There are many variations of Potato Cake recipes. You can experiment with your own version.
Ingredients
- baking paper
- 6 potatoes
- 1 cup corn kernels
- 1 cup cooked peas
- 1 teaspoon mixed Italian herbs, Australian spices or any other herb and spice combination
- 1 finely chopped onion or shallots
- 2 tablespoons of arrowroot, cornstarch or rolled oats
- small amount of soy, almond or oat milk depending on how moist you want the mixture to be
Method
- Mash potatoes. You could add some cooked sweet potato to the potato mixture.
- Add all the other ingredients
- Place baking paper on oven trays
- Form into patties and place on oven trays
- Cook for 20 minutes at 180°C (350°F)
- Flip potato cakes and cook for another 20 minutes
- Let the patties cool for 10-15 minutes as they hold their shape better.
